Description

(Tragopogon porrifolius) (aka Sandwich Island) Originally native to the Mediterranean, this variety dates to at least the 1880s. Known as “Vegetable Oyster” due to its uncanny oyster-like flavor. Long tapered roots average 8-10″ long and 1″ in diameter. Creamy white skin and white flesh. Upright grass-like leaves.
